Campaign SightFirst II

Lions will not allow “nothing to be done.” True to their commitment to be “knights of the blind,” Lions have launched Campaign SightFirst II.

We have set out to raise at least $150 million to continue and expand the extraordinary work of SightFirst. Lions worldwide have been working to combat preventable blindness.

If nothing is done about preventable blindness, our global population (37 million) of the blind could double by the year 2020.

Pancake Breakfast History

In 1999, the Muskegon Northside Lions Club purchased a 30 foot concession trailer. In it we installed four custom griddles and away we went. During that year we held seven pancake breakfasts. The first was in conjunction with the Eastside Extravaganza, a community festival. The second was held at our club's festival, the Northside Lions' "Spring Fling." Then came four at the Muskegon State Park as a convenience to the campers. The second Saturday in August found us at the North Muskegon Art Fair. Not too bad for one year with a new rig.

In "2000" we installed a refrigerator, upright freezer and a microwave to satisfy our needs and the Muskegon County Health Dept. By startup time in 2001, our onboard water system was up and running. We are "free standing" and have a Transitory Food permit. We can go anywhere in the State of Michigan.

"2001" - A "big" plus was a Saturday and Sunday at the Silver City Camp Ground in Oceana County for the Sandy Corley Memorial Run where it is anticipated that we would serve in excess of 800 people. This was at the request of the Fremont (Michigan) Harley Owners Group (H.O.G.s). We took in $1,200.00 in less than eight hours of operation. A great project to support our community. In 2003, we went to a Friday, Saturday and Sunday operation.

Psst! Would you like to know a secret?
Here is how we do it.

NORTHSIDE LIONS "SECRET" PANCAKE RECIPE

Tools: One five gallon stainless steel mixing pail, plaster mixer (chrome plated) and drill motor.

Ingredients:

Add 6 - 1 pound boxes of pancake mix
6-7 quarts of water
1/4 cup of oil
2 tablespoons of real vanilla

Makes 80-100 pancakes depending on who is doing the cooking.

Mix the above until smooth and lump free, adding water as needed.

Heat griddles to a temperature where water beads up and maintain that temperature.

LIGHTLY coat the griddle surface with a rag soaked in cooking oil. Repeat this after each batch of pancakes (8-10 pancakes).

Serve with sausage links, orange drink, milk and coffee and there you have a Northside Lions World Famous Pancake Breakfast.

Making you hungry? We hope so. Keep an eye on this site for our dates and locations listed above. Hope to see you there.
