Pancake Breakfast History
In 1999, the Muskegon Northside Lions Club purchased a 30 foot concession trailer. In it we installed four custom griddles and away we went. During that year we held seven pancake breakfasts. The first was in conjunction with the Eastside Extravaganza, a community festival. The second was held at our club's festival, the Northside Lions' "Spring Fling." Then came four at the Muskegon State Park as a convenience to the campers. The second Saturday in August found us at the North Muskegon Art Fair. Not too bad for one year with a new rig.
In "2000" we installed a refrigerator, upright freezer and a microwave to satisfy our needs and the Muskegon County Health Dept. By startup time in 2001, our onboard water system was up and running. We are "free standing" and have a Transitory Food permit. We can go anywhere in the State of Michigan.
"2001" - A "big" plus was a Saturday and Sunday at the Silver City Camp Ground in Oceana County for the Sandy Corley Memorial Run where it is anticipated that we would serve in excess of 800 people. This was at the request of the Fremont (Michigan) Harley Owners Group (H.O.G.s). We took in $1,200.00 in less than eight hours of operation. A great project to support our community. In 2003, we went to a Friday, Saturday and Sunday operation.
